Lentil Soup

Quick and easy antioxidant rich lentil soup to nourish, warm and support the immune system throughout winter


1 onion diced (red preferably)
2 cloves garlic (or more for immune support!)
1 teaspoon cinnamon
1 teaspoon turmeric
1 tablespoon ground coriander
Small amount chilli to taste
1 cup red lentils
300g cooked chopped tomatoes or 1 large tablespoon tomato paste
6 cups water
Juice of 1/2 lemon

  1. Cook onions and garlic for about a minute.
  2. Add cinnamon, turmeric and coriander.
  3. Add lentils and mix together.
  4. Add the water.
  5. Add tomatoes or paste and chilli
  6. Bring to the boil and simmer for about 20 minutes until the lentils are soft
  7. Add salt to taste
  8. Squeeze in lemon juice to taste.
  9. Garnish with freshly chopped coriander or parsley and serve with ground black pepper to taste.
